A Side: Roasted Greens

Great news today. South Africa, the home of the LCHF champion Professor Tim Noakes, has announced that it will be introducing a sugar tax. This is a step towards dealing with the severe obesity crisis in the country. Read details here.

This follows on from yesterdays post on the benefits of coconut oil. For anyone who has ever struggled to eat greens, try them like this. Coconut oil gives them a fantastic flavour and is a really healthy fat.

Ingredients

  • 8-12 spears of asparagus
  • 300g sprouts
  • 1 tablespoon of coconut oil
  • salt and pepper

Method

Preheat the oven to 200 degC. Place the coconut oil onto a roasting tray and put into the oven to melt.

Rought chop the sprouts. When the oven has reached temperature, remove the hot roasting tray and place all the greens onto it and mix well with the oil. Season with salt and pepper.

Roast for about 15 minutes, stirring once mid cooking.
