- 50g of sliced almonds
- juice of 1 lemon
- a handful of fresh mint, chopped
- 4 tblsp of Extra Virgin Oil
- Salt and Pepper
Toast the almonds in a dry frying pan over a moderate heat until lightly browned. When they have cooled, combined all the ingredients in a sealed container and shake well to emulsify.
