Lunch: Smoked Mackerel Salad

Staple foods on a ketogenic diet include meat, fish, butter, eggs, cheese, cream, coconut oil, nuts, avocados, seeds and low-carb vegetables.

In contrast, nearly all carb sources are eliminated, including grains, rice, beans,potatoes, sweets and cereals.

There are lots of healthy fats in this salad today, plenty of Omega 3 essential oils in the mackerel.

Ingredients:

  • A large handful of Spinach
  • 1/2 a red pepper sliced
  • 1 stick of celery chopped
  • 100g of smoked mackerel
  • 1/2 an avocado mashed
  • 4 tablespoons of Extra virgin olive oil
  • Juice of 1/2 lemon
  • Sea salt and freshly ground pepper

Method:

Make the dressing by combining the oil, lemon juice and salt and pepper in a container with a lid. Shake well to emulsify.

Assemble the rest of the ingredients in a bowl and pour over the dressing. It’s that simple.
