Dinner: Chicken Pie

The author says “Eating fat makes you fuller sooner and longer. Eating sugar leads to a sugar crash which makes you hungrier sooner and in a position to crave more sugar. A vicious cycle indeed.”

This is a nice low carb recipe for left-over roast chicken.

Ingredients:

  • 25g of butter
  • 1 onion
  • 2 cloves of garlic
  • 1 carrot chopped small
  • 2 sticks of celery chopped small
  • 1 large leek chopped small
  • 200g of mushroom chopped
  •  a handful of thyme
  • 350 g of cooked chicken
  • 200ml of full fat milk
  • 1 head of cauliflower, made into cauli mash
  • 100g of cheddar cheese cut into slices

Method:

Make this is a pot that can go under a grill.

Melt the butter and gently fry the onion, garlic, carrot, celery and leek until they are softened. Add the mushrooms and thyme and cover with hot water. Continue to simmer for about 20 minutes until all the veg are fully cooked.

Add the chicken and milk (or cream if you wish) and stir through until hot. Season with salt and pepper.

Top the mixture with the cauli mash and cheddar cheese and grill for about 15 minutes until the cheese is fully melted and bubbling.

It ready to serve with some salad or green veg.
