Dinner: Quick Hot Salmon Salad

Fish is high in many important vitamins and minerals. Fatty types of fish are also high in omega-3 fatty acids and vitamin D and is especially suited to an LCHF lifestyle.

This recipe is also ideal for a picnic as fresh salmon is delicious cold also. Bring your dressing in a separate container to avoid the leaves getting soggy.

Ingredients:

  • A handful of spinach or rocket
  • Guacamole
  • 1 fresh salmon fillet (approx 150g)
  • Extra Virgin Olive oil
  • Lemon Juice

Method:

Fry the salmon skin side down on a frying pan for about 7 minutes to get a really crispy delicious skin.

Turn over and continue to cook for a few more minutes until just cooked through.

Serve on a bed of spinach with a side of guacamole

Dress with EVO and lemon juice to taste.
