Get your sugar intake as low as possible and substitute with healthy fats!
Today’s lunch is an Irish version of a Greek Salad. Lots of good quality fats here in the olive oil, feta cheese and olives. All we are missing is the nice warm weather.
- 1 large handful of spinach leaves
- 1 spring onion, chopped
- 75g of feta cheese
- 8-10 Kalamata (or other good quality) olives
- 10 cherry tomatoes
- 1 tblsp of white wine vinegar
- 3 tblsp of extra virgin olive oil
Assemble the ingredients in a bowl and dress with EVO and vinegar
