This is a delicious and super fast LCHF fish tray bake that serves 2. The anchovies dissolve and give the dish a deliciously smoky taste.
- 10-12 asparagus spears
- 240g of fresh salmon
- a handful of olives
- 1 tin of anchovies
- 1 head of broccoli
- 1 handful of cherry tomatoes
- 1 lemon cut into 4
Preheat the oven to 200 deg C.
Place the salmon onto an oven tray. Assemble the olives, tomatoes, broccoli, asparagus and lemon on top and around the salmon. Divide up the anchovies and spread them over the veggies.
Bake in the oven for 12-15 minutes until the salmon is just cooked through.
