Fresh mackerel is a delicious sustainable oily fish, but must be absolutely fresh to be nice. A good way to know if it is fresh is if the skin is vibrant and shiny.
Here it is grilled for 12 minutes skin side up. Serve on top of tomato reduction with olive oil and broccoli. The skin is deliciously crunchy!
