Leeks really compliment roast chicken. Add 2 large leeks to the roasting dish 45 minutes before the chicken is due to finish roasting. Some of the fats will already have rendered from the chicken so give the leeks a really good mix in them. They will absorb them and be really delicious. Serve with non starchy veg and dress with EVO.
