For those who are on a strict low-carb or ketogenic diet, eating fruit can prevent ketosis. Also, generally speaking non starchy vegetables are a better choice if trying to lose weight.

Yesterdays blackberries were a perfect ingredient in these low carb muffins. They are really lovely for breakfast with a dollop of full fat greek yoghurt!
Ingredients:
- 2 large cooking apples peeled and grated
- 4 eggs
- 60ml of melted butter allowed to cool
- 80g of dessicated coconut
- 40g of coconut flour
- 60g of flaxseed, freshly ground in a blender
- 1 tsp of baking powder
- a large pinch of salt
- 200g of wild blackberries (or other small berry of your choice)
Method:
- Pre heat the oven to gas 180 deg C. Prepare a muffin tin with 15 cases
- Whisk the eggs with the butter
- Now add the grated apple to the wet mixture and stir well
- Mix all the coconut, flax, baking powder and salt together in another bowl. When well combined, add to the wet ingredients and stir well to get an even mixture
- Now add the blackberries and stir gently to avoid breaking them up
- Divide the mixture between the muffin cases
- Bake for about 28-30 minutes until lightly browned
