Weekend Dinner – Low Carb Roast

A common mistake that Banters (LCHF followers) make initially is not eating enough healthy fats. It is essential to have about 70% of your nutrients from healthy fats for the lifestyle to be really effective.

A roast is always a nice dinner on a Sunday and is very easy to modify to be low carb. Just leave out the stuffing, eat the skin on the meat and serve with a creamy sauce and plenty of non starchy veg.

Here the leeks are cooked in the base of the roasting dish and so soak up all the nice chicken fats. Also the cream cheese side compliments the chicken really well.
