An Essential Condiment : Cider Apple Vinegar

Apple Cider Vinegar contains both vinegar (acetic acid) as well as the pectins from the apple cider (a type of soluble fibre). It is promoted for consumption at meal times by Dr Jason Fung as it improves insulin sensitivity and hence can promote weight loss.

Today I bought a nice looking Cider Apple Vinegar at a local farmers food market. It will make a nice dressing by mixing 1 part vinegar to 3 parts extra virgin olive oil and some salt and pepper.
