Avocado and egg really compliment each other. This is really tasty for either breakfast or lunch.
Fry 2 or 3 eggs in some good quality natural fat for about 3 minutes to cook but still keep the yolk runny. I used chicken fat leftover from a roasted chicken.
Serve with 1/2 a chopped avocado and a sprinkling of toasted sunflower seeds if you like some extra crunch.
